500g farfalle pasta 2 tbsp oil 1 onion, chopped 2 garlic cloves, chopped 300g fresh spinach, finely chopped Nutmeg, a pinch Grated lemon rind, to taste 250ml sour cream 50g chopped nuts, roasted METHOD
1 Cook the pasta until al dente.
2 Heat the oil in a heavybottomed frying pan and sauté the onion until glossy. Add the garlic and spinach and sauté until the spinach has wilted, stirring occasionally.
3 Season well with salt, pepper, nutmeg and lemon rind. Add the sour cream and heat through, then add the pasta and sprinkle with nuts. Serve immediately.
