500g far­falle pasta 2 tbsp oil 1 onion, chopped 2 gar­lic cloves, chopped 300g fresh spinach, finely chopped Nut­meg, a pinch Grated lemon rind, to taste 250ml sour cream 50g chopped nuts, roasted METHOD

1 Cook the pasta un­til al dente.

2 Heat the oil in a heavy­bot­tomed fry­ing pan and sauté the onion un­til glossy. Add the gar­lic and spinach and sauté un­til the spinach has wilted, stir­ring oc­ca­sion­ally.

3 Sea­son well with salt, pep­per, nut­meg and lemon rind. Add the sour cream and heat through, then add the pasta and sprin­kle with nuts. Serve im­me­di­ately.
