Turk­ish-style mar­i­nated lamb chops

Prep time overnight Cook­ing time 5 mins Serves 4 1 Turk­ish chilli, roughly chopped 3 toma­toes, quar­tered 2 tbsp tomato purée 2 gar­lic cloves 100g cream cheese 8 lamb chops, trimmed of fat 1 tbsp chopped fresh thyme 2 tsp olive oil

To make the mari­nade, place the chilli, toma­toes, tomato purée, gar­lic, cream cheese and a pinch of salt in a food pro­ces­sor and blitz un­til smooth. Pour into a medium-size glass bowl. Add lamb chops, mix well and cover with alu­minium foil. Re­frig­er­ate overnight.

Heat the grill to high. Sprin­kle the lamb with thyme, sea­son and driz­zle with olive oil. Grill the chops, turn­ing once. Gar­nish with pars­ley and serve. If you pre­fer your lamb medium rare, do not cook for more than 5 min­utes.
