Turkish-style marinated lamb chops
Prep time overnight Cooking time 5 mins Serves 4 1 Turkish chilli, roughly chopped 3 tomatoes, quartered 2 tbsp tomato purée 2 garlic cloves 100g cream cheese 8 lamb chops, trimmed of fat 1 tbsp chopped fresh thyme 2 tsp olive oil
To make the marinade, place the chilli, tomatoes, tomato purée, garlic, cream cheese and a pinch of salt in a food processor and blitz until smooth. Pour into a medium-size glass bowl. Add lamb chops, mix well and cover with aluminium foil. Refrigerate overnight.
Heat the grill to high. Sprinkle the lamb with thyme, season and drizzle with olive oil. Grill the chops, turning once. Garnish with parsley and serve. If you prefer your lamb medium rare, do not cook for more than 5 minutes.
