Tomato, pome­gran­ate, red onion and sumac salad

6 her­itage toma­toes (as­sorted colours and shapes), roughly chopped 2 red onions, sliced Pearls from 1 pome­gran­ate 1 tsp sumac Salad leaves of your choice

FOR THE DRESS­ING, MIX TO­GETHER

4 tbsp ex­tra vir­gin olive oil 2 tbsp pome­gran­ate mo­lasses 1 tsp honey 1 small lemon, juice of 1/2 tbsp whole­grain mus­tard

1 Sprin­kle salt and pep­per over the toma­toes and al­low them to stand for 5 min­utes.

2 Add the toma­toes to the re­main­ing salad in­gre­di­ents, driz­zle with dress­ing, toss and serve.
