Tomato, pomegranate, red onion and sumac salad

6 heritage tomatoes (assorted colours and shapes), roughly chopped 2 red onions, sliced Pearls from 1 pomegranate 1 tsp sumac Salad leaves of your choice
FOR THE DRESSING, MIX TOGETHER
4 tbsp extra virgin olive oil 2 tbsp pomegranate molasses 1 tsp honey 1 small lemon, juice of 1/2 tbsp wholegrain mustard
1 Sprinkle salt and pepper over the tomatoes and allow them to stand for 5 minutes.
2 Add the tomatoes to the remaining salad ingredients, drizzle with dressing, toss and serve.
