Prep time 10 mins Cooking time 30-35 mins Serves 2 4 tbsp olive oil 2 onions, diced 2 garlic cloves, crushed 2 aubergines, diced 3 courgettes, diced 2 red peppers, diced 400g can whole and peeled tomatoes A handful of fresh basil, roughly chopped 1 Heat the oil in a large pan and gently fry the onions and garlic over a low heat for about 10 minutes or until softened.
2 Add the aubergines, courgettes and peppers and fry for another 10 minutes.
3 Add the tomatoes and basil and season. Stir thoroughly once, then cover the pan with a lid and simmer very gently for 10-15 minutes.
4 Adjust seasoning and serve with crusty bread to mop up the juices.
