Prep time 10 mins Cook­ing time 30-35 mins Serves 2 4 tbsp olive oil 2 onions, diced 2 gar­lic cloves, crushed 2 aubergines, diced 3 cour­gettes, diced 2 red pep­pers, diced 400g can whole and peeled toma­toes A hand­ful of fresh basil, roughly chopped 1 Heat the oil in a large pan and gen­tly fry the onions and gar­lic over a low heat for about 10 min­utes or un­til soft­ened.

2 Add the aubergines, cour­gettes and pep­pers and fry for another 10 min­utes.

3 Add the toma­toes and basil and sea­son. Stir thor­oughly once, then cover the pan with a lid and sim­mer very gen­tly for 10-15 min­utes.

4 Ad­just sea­son­ing and serve with crusty bread to mop up the juices.
