3 tbsp olive oil 1 onion, finely chopped 2 gar­lic cloves, chopped 250g beef ba­con, finely chopped 1 roasted chicken, deboned 250ml cream 500g lin­guine 30g fresh basil, roughly chopped, plus ex­tra to serve 30g grated Parme­san cheese, to serve

1 Warm olive oil in a medi­um­sized pan. Add onion and gar­lic. Fry for 3-5 min­utes or un­til they start to brown.

2 Add beef ba­con and fry for an­other 5 min­utes.

3 Add chicken and fry for an­other 5-8 min­utes.

4 Add cream and lower the heat. Sim­mer slowly for 8 to 10 min­utes or un­til you have a creamy sauce.

5 Mean­while, cook pasta ac­cord­ing to packet di­rec­tions and drain.

6 Mix the pasta with the chicken sauce. Flavour well with salt and black pep­per. Add basil and stir through. Scat­ter with Parme­san and serve hot, gar­nished with ex­tra basil.
