CREAMY CHICKEN PASTA

3 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, chopped 250g beef bacon, finely chopped 1 roasted chicken, deboned 250ml cream 500g linguine 30g fresh basil, roughly chopped, plus extra to serve 30g grated Parmesan cheese, to serve
1 Warm olive oil in a mediumsized pan. Add onion and garlic. Fry for 3-5 minutes or until they start to brown.
2 Add beef bacon and fry for another 5 minutes.
3 Add chicken and fry for another 5-8 minutes.
4 Add cream and lower the heat. Simmer slowly for 8 to 10 minutes or until you have a creamy sauce.
5 Meanwhile, cook pasta according to packet directions and drain.
6 Mix the pasta with the chicken sauce. Flavour well with salt and black pepper. Add basil and stir through. Scatter with Parmesan and serve hot, garnished with extra basil.
