TUNA AND AVOCADO WRAP
Prep time 15 mins Serves 2 2 wholemeal or multigrain wraps 1 small avocado, mashed 1 small carrot, grated 1 small cucumber, cut into thin ribbons 180g canned tuna in water, drained, flaked 1 tbsp whole-egg mayonnaise 2 iceberg lettuce leaves, shredded Salad, to serve
1 Place 1 wrap on a board. Spread half the avocado on it, leaving a 1cm border. Top with half the carrot, cucumber and tuna.
2 Drizzle half a tablespoon of mayonnaise on top and sprinkle with half the lettuce. Roll the wrap tightly.
3 Repeat with the remaining ingredients to make the second wrap. Serve with salad.
