PEA& BROCCOLI FRIT­TATA

Prep time 5 mins Cook­ing time 35 mins Serves 4 Olive oil spray 1 tbsp olive oil 100g fresh peas, shelled 300g broccoli, cut into flo­rets 6 eggs 125ml milk Cherry toma­toes and cru­dités, to serve

1 Pre­heat oven to 180°C. Spray a 20cm square cake pan with oil. Line base and sides with grease-proof pa­per, al­low­ing its 2 long sides to over­hang.

2 Heat oil in a large non-stick fry­ing pan over medi­umhigh heat. Stir-fry the veg­eta­bles for 3 min­utes or un­til soft. Trans­fer to the pre­pared bak­ing tin.

3 Whisk the eggs and milk in a bowl. Sea­son with salt and pep­per and pour over the veg­eta­bles. Bake for 25-30 min­utes or un­til light golden and well set. Set aside for 10 min­utes to cool slightly. Cut into por­tions and serve with cherry toma­toes and cru­dités.
