PEA& BROCCOLI FRITTATA
Prep time 5 mins Cooking time 35 mins Serves 4 Olive oil spray 1 tbsp olive oil 100g fresh peas, shelled 300g broccoli, cut into florets 6 eggs 125ml milk Cherry tomatoes and crudités, to serve
1 Preheat oven to 180°C. Spray a 20cm square cake pan with oil. Line base and sides with grease-proof paper, allowing its 2 long sides to overhang.
2 Heat oil in a large non-stick frying pan over mediumhigh heat. Stir-fry the vegetables for 3 minutes or until soft. Transfer to the prepared baking tin.
3 Whisk the eggs and milk in a bowl. Season with salt and pepper and pour over the vegetables. Bake for 25-30 minutes or until light golden and well set. Set aside for 10 minutes to cool slightly. Cut into portions and serve with cherry tomatoes and crudités.
