Sal­mon bran­dade

2 large pota­toes, peeled and cut into 1.5cm cubes 250ml milk 2 garlic cloves, crushed 1 small onion, finely chopped 200g cooked sal­mon, flaked 1 tbsp white grape vine­gar 3 tbsp olive oil 1/3 cup roughly chopped dill Cros­tini, rocket, olives and lime wedges, to serve

1 Place the pota­toes in a pan with the milk, garlic and onion and bring to the boil. Re­duce the heat and sim­mer for 8-10 min­utes or un­til the potato is soft.

2 Re­move the pan from the heat, add the sal­mon and mash gen­tly with a fork, leav­ing some larger chunks. Add the vine­gar, oil and half the dill. Stir to com­bine.

3 Serve the bran­dade on cros­tini, with rocket leaves, olives, lime wedges and the re­main­ing dill.
