MINTED MUSHROOMS AND BEANS
1 Preheat the oven to 200°C. Prep time 15 mins Cooking time 35 mins Serves 8 1kg mixed mushrooms, cleaned and trimmed Olive oil, to drizzle 2 garlic cloves, crushed 6 spring onions, sliced 200g fine green beans, blanched 25ml mint jelly Fresh mint, to garnish 2 Cut any large mushrooms into 2-3 pieces and leave the small ones whole. Place them in a roasting tin and drizzle with olive oil. 3 Add the garlic and spring onions. Toss well. Cover with foil and roast for 20 mins. 4 Uncover and add the green beans and roast for another 10-15 mins. 5 Remove from the oven and stir in the mint jelly. Season with salt and pepper, then garnish with mint and serve.
