1 Pre­heat the oven to 200°C. Prep time 15 mins Cook­ing time 35 mins Serves 8 1kg mixed mush­rooms, cleaned and trimmed Olive oil, to driz­zle 2 garlic cloves, crushed 6 spring onions, sliced 200g fine green beans, blanched 25ml mint jelly Fresh mint, to gar­nish 2 Cut any large mush­rooms into 2-3 pieces and leave the small ones whole. Place them in a roast­ing tin and driz­zle with olive oil. 3 Add the garlic and spring onions. Toss well. Cover with foil and roast for 20 mins. 4 Un­cover and add the green beans and roast for another 10-15 mins. 5 Re­move from the oven and stir in the mint jelly. Sea­son with salt and pep­per, then gar­nish with mint and serve.
