Lazy lasagna

300g minced beef 2 onions, finely diced 2-3 garlic cloves, minced 200g cooked chicken sausage 10 lasagna sheets, bro­ken into pieces 400ml canned, diced toma­toes 1 cup tomato sauce

2 cups wa­ter 1 cup grated moz­zarella 100g fresh moz­zarella pearls Olive oil and mi­cro herbs, to serve

1 In a large, deep fry­ing pan, cook the beef and onions over medium-high heat, stir­ring oc­ca­sion­ally un­til browned. Drain off any ex­cess fat, if nec­es­sary. 2 Stir in the garlic and cook for 1 minute or un­til fra­grant. Add the sausage, lasagna pieces, toma­toes, tomato sauce and wa­ter. Sea­son and stir to com­bine. 3 Cover and sim­mer for 15 min­utes over medium to medium-low heat. Shake the pan oc­ca­sion­ally to evenly dis­trib­ute the lasagna pieces as they soften. 4 Re­move from the heat and stir in the cheese. Top with the moz­zarella pearls and grill for 3-4 min­utes or un­til golden. Serve hot with a driz­zle of olive oil and a scat­ter­ing of mi­cro herbs.
