LOOKING FOR THE CRUNCH FACTOR
Q I love to have croutons with my soup but now that I’m off breads, I’m wondering if I can make croutons with something else. Do you have any ideas?
A Apples add a wonderful crunch. Here’s what you need to do. Peel, core and thinly slice 1 large apple. Now heat 1 tbsp olive oil in a frying pan over medium heat, add the apple slices and sauté until the fruit begins to soften. Add a few pinches of golden caster sugar and stir until the apples caramelise. Remove from the pan and serve with your soup. Crispy fried kale or spinach also provide the crunch factor you’re looking for. Enjoy!
