QA­part from muffins and frit­tatas, what else can I make in a muffin tray?

AFrom mini tartlets to lasagne, you can make a range of good­ies in a muffin tray, but keep in mind that the bak­ing time will not be the same as that for a reg­u­lar pan.

My favourite food cooked in the muffin tray is mini gratin. Here’s how I make them. Finely dice 400g of De­siree pota­toes and 300g of sweet pota­toes. Finely chop 175g of beef ba­con too. Thinly slice one red onion, crush a clove of gar­lic and cut 200g of Brie into very small cubes.

Pre­heat the oven to 200°C. Heat 2 tsp of olive oil in a saucepan. Add onion and ba­con and sauté for 5 min­utes. Then add gar­lic and sauté for a minute or un­til aro­matic. Add about 150ml of chicken or veg­etable stock and sim­mer for a cou­ple of min­utes. Stir in the pota­toes, Brie and 2 tsp of chopped fresh thyme.

Lightly grease an 18-hole muffin tray and spoon equal por­tions of the mix­ture. Driz­zle about 150ml of cream on top and bake for not more than 30 min­utes or un­til golden and bub­bling. Let it stand in the tray for 5 min­utes. Serve as an ap­pe­tiser.
