CHICKEN SLIDERS WITH LIME MAYO

10 mini rolls, halved 50g baby Asian salad leaves
400g chicken breast fillets, trimmed, chopped 2 garlic cloves, chopped 2cm piece fresh ginger, peeled, finely chopped 1½ tsp mild curry powder 2 green onions, roughly chopped ¼ cup fresh coriander leaves 1 tbsp peanut oil
FOR THE LIME MAYO, MIX TOGETHER
½ cup whole-egg mayonnaise 2 tsp finely grated lime zest 2 tbsp lime juice
Process all the ingredients for the patties (except the oil) until well combined. Divide mixture into 10 portions. Flatten slightly. Heat the oil in a frying pan over medium-high heat. Cook patties for 3-4 minutes each side or until browned and cooked through.
Spread lime mayo over the rolls. Place salad leaves and patties on each and serve immediately.
