CHICKEN SLID­ERS WITH LIME MAYO

10 mini rolls, halved 50g baby Asian salad leaves

PAT­TIES

400g chicken breast fil­lets, trimmed, chopped 2 gar­lic cloves, chopped 2cm piece fresh gin­ger, peeled, finely chopped 1½ tsp mild curry pow­der 2 green onions, roughly chopped ¼ cup fresh co­rian­der leaves 1 tbsp peanut oil

FOR THE LIME MAYO, MIX TO­GETHER

½ cup whole-egg may­on­naise 2 tsp finely grated lime zest 2 tbsp lime juice

Process all the in­gre­di­ents for the pat­ties (ex­cept the oil) un­til well com­bined. Di­vide mix­ture into 10 por­tions. Flat­ten slightly. Heat the oil in a fry­ing pan over medium-high heat. Cook pat­ties for 3-4 min­utes each side or un­til browned and cooked through.

Spread lime mayo over the rolls. Place salad leaves and pat­ties on each and serve im­me­di­ately.
