Prep time 40 mins Cook­ing time 15 mins Makes 1 5g dried yeast 350g strong white flour, plus reg­u­lar flour to work the dough 1 tsp salt 100ml crème fraîche 1 tbsp freshly chopped herbs 1 egg yolk 2 red onions, thinly sliced 100g beef ba­con, sliced 6-8 pick­led green chill­ies 2 tbsp olive oil Dis­solve the yeast in 175ml luke­warm wa­ter and knead with the flour and salt into a smooth dough. Cover and leave in a warm place for 30 min­utes. Pre­heat the oven to 220°C and line a bak­ing tray with grease­proof pa­per. Knead the dough on a floured sur­face, roll out into an ob­long shape and place on the tray. Mix crème fraîche with herbs and yolk un­til smooth. Sea­son with salt and black pep­per, and spread over the dough, leav­ing a nar­row edge. Ar­range onions, beef ba­con and chill­ies on top, sea­son with black pep­per and driz­zle with oil. Bake un­til golden brown and serve hot.
