500g white fish fil­lets, cubed 4 tbsp corn­flour Oil, for shal­low fry­ing, plus 2 tbsp 6 spring onions, roughly chopped 3cm fresh gin­ger, peeled and grated 2 cloves gar­lic, finely chopped 200g green beans, halved 1 small lemon, zested and juiced 200g Asian noo­dles, cooked ac­cord­ing to pack­age in­struc­tions and drained 1 tbsp sesame oil 2 tbsp sweet soy sauce

Sea­son the fish cubes and roll them in corn­flour. Heat some oil and shal­low-fry un­til the fish is crisp. Set aside. In a wok or fry­ing pan, heat 2 tbsp oil and sauté spring onions, gin­ger and gar­lic for a few min­utes. Add the green beans and fry over high heat for 2 min­utes. Re­turn the fish to the pan and add lemon juice, zest, and salt and pep­per to taste. Stir-fry the noo­dles in sesame oil for a minute, add soy sauce and fry a few more min­utes. To serve, ar­range the fish on the noo­dles.
