CAPE CURRY ROLLS

2 tbsp oil 1 onion, roughly chopped 1 clove garlic, roughly chopped 1 celery stalk, roughly chopped 1 carrot, grated 2 tbsp mild curry powder 1 tsp turmeric powder 500g minced beef 1 tbsp apricot jam 4 bread rolls
Heat the oil and sauté onion, garlic, celery and carrot until soft and fragrant. Add the curry powder and turmeric and sauté for 2 minutes. Add the mince and stir-fry, coating the meat with the curry mixture. Add the apricot jam and season. Reduce the heat and simmer for 15 minutes. Fill the rolls with the Cape curry and serve immediately.
