Prep time 15 mins Cook­ing time 30 mins Makes about 560ml 1kg peaches, peeled, pits re­moved and chopped 2 onions, roughly chopped 2 gar­lic cloves, crushed 5cm fresh gin­ger, peeled and grated 125ml white grape vine­gar ½ cup light brown sugar Place all the in­gre­di­ents in a saucepan and stir un­til the sugar is dis­solved. Bring to the boil, cover and lower the heat to let it sim­mer for 15 min­utes. Stir reg­u­larly. Cook un­til the chut­ney thickens. When done, sea­son with salt and freshly ground black pep­per and spoon into ster­ilised glass bot­tles.
