EASY PEACH CHUTNEY
Prep time 15 mins Cooking time 30 mins Makes about 560ml 1kg peaches, peeled, pits removed and chopped 2 onions, roughly chopped 2 garlic cloves, crushed 5cm fresh ginger, peeled and grated 125ml white grape vinegar ½ cup light brown sugar Place all the ingredients in a saucepan and stir until the sugar is dissolved. Bring to the boil, cover and lower the heat to let it simmer for 15 minutes. Stir regularly. Cook until the chutney thickens. When done, season with salt and freshly ground black pepper and spoon into sterilised glass bottles.
