BEEF BACON RAREBIT

1 ciabatta (or other farm-style bread) 2 cups (500ml) grated cheese 2 eggs, beaten ½ onion, finely chopped 4 tsp mustard powder 250g beef bacon, cooked Slice the bread and arrange it on a baking tray. Toast both sides. Mix the cheese, eggs, onion and mustard powder together, season with salt and pepper, and divide the mixture between the slices. Top each one with cooked bacon and grill until golden brown.
