1 cia­batta (or other farm-style bread) 2 cups (500ml) grated cheese 2 eggs, beaten ½ onion, finely chopped 4 tsp mus­tard pow­der 250g beef ba­con, cooked Slice the bread and ar­range it on a bak­ing tray. Toast both sides. Mix the cheese, eggs, onion and mus­tard pow­der to­gether, sea­son with salt and pep­per, and di­vide the mix­ture be­tween the slices. Top each one with cooked ba­con and grill un­til golden brown.
