VEG­GIE STIR-FRIED RICE WITH EGG

Cook­ing oil, as needed 1 medium-size aubergine, sliced 1 cup green peas 3 leeks, chopped 3 spring onions, chopped Baby spinach, a handful 1 cup rice, cooked 2 eggs, beaten ½ cup peanuts Soy sauce, a splash Sauté aubergine in oil un­til soft and slightly brown. Add the rest of the veg­eta­bles and stir-fry un­til cooked. Stir in the rice and heat un­til warmed through. Move the stir-fried in­gre­di­ents to the side of the pan and add the eggs. Stir the eggs un­til slightly scram­bled and then mix them with the rice mix­ture. Sauté un­til the eggs are well cooked. Take the pan off the heat and stir in the peanuts and soy sauce.
