VEGGIE STIR-FRIED RICE WITH EGG

Cooking oil, as needed 1 medium-size aubergine, sliced 1 cup green peas 3 leeks, chopped 3 spring onions, chopped Baby spinach, a handful 1 cup rice, cooked 2 eggs, beaten ½ cup peanuts Soy sauce, a splash Sauté aubergine in oil until soft and slightly brown. Add the rest of the vegetables and stir-fry until cooked. Stir in the rice and heat until warmed through. Move the stir-fried ingredients to the side of the pan and add the eggs. Stir the eggs until slightly scrambled and then mix them with the rice mixture. Sauté until the eggs are well cooked. Take the pan off the heat and stir in the peanuts and soy sauce.
