OMELETTE WITH SMOKED SALMON

3 eggs, separated 1 tbsp butter 1 tbsp oil 1 heaped tbsp cream cheese 2-4 thin slices of smoked salmon 1 spring onion, chopped Beat the egg whites until stiff. Add the egg yolks, season, and gently fold in the egg yolks. Heat butter and oil in an ovenproof frying pan. Add the egg mixture and cook until the bottom is set. Place the pan in the oven and grill until the top is set. Remove the omelette and while it’s still hot, top it with the remaining ingredients. Fold and serve.
