3 eggs, sep­a­rated 1 tbsp but­ter 1 tbsp oil 1 heaped tbsp cream cheese 2-4 thin slices of smoked salmon 1 spring onion, chopped Beat the egg whites un­til stiff. Add the egg yolks, sea­son, and gen­tly fold in the egg yolks. Heat but­ter and oil in an oven­proof fry­ing pan. Add the egg mix­ture and cook un­til the bot­tom is set. Place the pan in the oven and grill un­til the top is set. Re­move the omelette and while it’s still hot, top it with the re­main­ing in­gre­di­ents. Fold and serve.
