FRENCH TOAST SOL­DIERS

Prep time 10 mins Cook­ing time 10 mins Serves 3 8 slices white bread But­ter, as de­sired Fish paste, as de­sired 6 ex­tra-large eggs 2 tbsp wa­ter Oil, for fry­ing But­ter one side of the bread slices, then smear 4 with fish paste and top with the re­main­ing slices to make a sand­wich. Press down, cut off the crusts and cut each sand­wich into 3 ‘sol­diers’. Beat 3 of the eggs and the wa­ter to­gether and care­fully dip each sol­dier into the egg mix­ture. Heat a lit­tle oil in a non-stick pan and fry the sol­diers on each. Soft-boil the re­main­ing eggs and serve with sol­diers for dip­ping.
