FRENCH TOAST SOLDIERS
Prep time 10 mins Cooking time 10 mins Serves 3 8 slices white bread Butter, as desired Fish paste, as desired 6 extra-large eggs 2 tbsp water Oil, for frying Butter one side of the bread slices, then smear 4 with fish paste and top with the remaining slices to make a sandwich. Press down, cut off the crusts and cut each sandwich into 3 ‘soldiers’. Beat 3 of the eggs and the water together and carefully dip each soldier into the egg mixture. Heat a little oil in a non-stick pan and fry the soldiers on each. Soft-boil the remaining eggs and serve with soldiers for dipping.
