CREAMY POTATO BAKE
Prep time 15 mins Cooking time 30-40 mins Serves 4 700g new potatoes, scrubbed and thinly sliced ½ tsp grated nutmeg ½ cup grated Parmesan A few thyme leaves Thyme sprigs, to garnish WHISK TOGETHER: 1 cup cream ½ cup chicken stock 2 eggs Preheat the oven to 190ºC. Layer potato slices in an ovenproof dish, seasoning with a sprinkling of nutmeg and a little white pepper and salt between each layer. Pour the whisked mixture over the potatoes. Top with a little Parmesan cheese and a few thyme leaves. Bake for 30-40 minutes or until potatoes are cooked through. Garnish with thyme sprigs and serve.
