Prep time 15 mins Cook­ing time 30-40 mins Serves 4 700g new po­ta­toes, scrubbed and thinly sliced ½ tsp grated nut­meg ½ cup grated Parme­san A few thyme leaves Thyme sprigs, to gar­nish WHISK TO­GETHER: 1 cup cream ½ cup chicken stock 2 eggs Pre­heat the oven to 190ºC. Layer potato slices in an oven­proof dish, sea­son­ing with a sprin­kling of nut­meg and a lit­tle white pep­per and salt be­tween each layer. Pour the whisked mix­ture over the po­ta­toes. Top with a lit­tle Parme­san cheese and a few thyme leaves. Bake for 30-40 min­utes or un­til po­ta­toes are cooked through. Gar­nish with thyme sprigs and serve.
