FOR THE PASTRY 2 cups cake flour 2 tsp baking powder ½ tsp salt 1 tsp sugar ½ cup oil ½ cup milk ½ cup grated Cheddar cheese FOR THE FILLING, MIX: 175g canned tuna, drained 2 hard-boiled eggs, chopped 1 small onion, grated 2 tbsp mayonnaise 2 tbsp chopped fresh parsley Preheat the oven to 180°C. To prepare the pastry, sift together all the dry ingredients. Whisk together oil and milk. Add this to the flour mix along with cheese and bring together to form a pastry dough. Roll the dough in a rectangle on a floured surface and sprinkle the filling on top. Roll it like a roulade and slice horizontally into 2cm thick roundels. Arrange them on a greased baking sheet and bake for 20 minutes or until done. Serve hot with a salad.
