Prep time 10 mins Bak­ing time 20 mins Serves 4-6

Oil, as re­quired 2x175g canned tuna, drained 1 onion, chopped 2 tbsp chopped spinach 6 eggs, whisked 4 tbsp may­on­naise Fresh pars­ley, as re­quired Pre­heat the oven to 180°C. Grease 4 to 6 small oven­proof dishes with oil. Mix to­gether tuna, onion, spinach and some salt and pep­per. Di­vide the tuna mix­ture among the bowls. Whisk to­gether eggs and may­on­naise and pour over the tuna mix­ture. Bake for 20 min­utes or un­til done. Gar­nish with fresh pars­ley. Serve.
