4 tbsp olive oil 4 tbsp fresh or­ange juice 1 tbsp roughly torn mint sprigs 1 tbsp chopped co­rian­der 350g watermelon, de­seeded and cubed 10-15 small straw­ber­ries, halved 100g feta, cubed 10 mini tor­tillas, pan-fried in a splash of olive oil un­til crispy ⅓ cup pump­kin seeds, toasted 1 tbsp black se­same seeds Straw­ber­ries, to gar­nish

Whisk the olive oil, or­ange juice, mint and co­rian­der to­gether and com­bine well with the watermelon, straw­ber­ries and feta. Set aside. To as­sem­ble the ta­cos, top the pan-fried ta­cos with watermelon salad, sprin­kle with pump­kin and se­same seeds and gar­nish with straw­ber­ries.
