Prep time 5 mins Cook­ing time 25 mins Serves 4 1 sheet of puff pas­try 1 egg, beaten 6 large beef sausages, sliced 1 tbsp oil 1 red onion, sliced 1 clove of gar­lic, chopped 3 large toma­toes, cut in wedges 200g cherry toma­toes 100g feta, crum­bled 2 tbsp red grape vine­gar Fresh basil leaves, to serve Pre­heat the oven to 200°C. Place the pas­try on a piece of bak­ing pa­per on a bak­ing tray. Brush with beaten egg and add a strip of ex­tra dough around the edges to ex­ag­ger­ate the rim. Bake this shell for 10 mins, then lower the oven tem­per­a­ture to 180°C and bake for a fur­ther 10 min­utes. Flat­ten the cen­tre as soon as it comes out of the oven. Mean­while, fry the sausages in oil un­til golden brown. Add the re­main­ing in­gre­di­ents and toss. Spread the mix­ture on the pas­try shell and re­turn it to the oven for 5 min­utes, or un­til the toma­toes skins be­gin to burst. Sea­son and sprin­kle the basil leaves over the top.
