Prep time 5 mins Cooking time 25 mins Serves 4 1 sheet of puff pastry 1 egg, beaten 6 large beef sausages, sliced 1 tbsp oil 1 red onion, sliced 1 clove of garlic, chopped 3 large tomatoes, cut in wedges 200g cherry tomatoes 100g feta, crumbled 2 tbsp red grape vinegar Fresh basil leaves, to serve Preheat the oven to 200°C. Place the pastry on a piece of baking paper on a baking tray. Brush with beaten egg and add a strip of extra dough around the edges to exaggerate the rim. Bake this shell for 10 mins, then lower the oven temperature to 180°C and bake for a further 10 minutes. Flatten the centre as soon as it comes out of the oven. Meanwhile, fry the sausages in oil until golden brown. Add the remaining ingredients and toss. Spread the mixture on the pastry shell and return it to the oven for 5 minutes, or until the tomatoes skins begin to burst. Season and sprinkle the basil leaves over the top.
