Prep time 30 mins Cooking time 15-20 mins Makes 1.5 litres FOR THE SYRUP 8 large ripe lemons 1.5 litres water 125g fresh ginger, grated 1kg sugar 2 tsp cream of tartar ADD-ONS Soda water, ice, lemon or ginger slices and mint leaves To prepare the syrup, wash the lemons and grate the zest, and squeeze the juice. Heat the zest and juice with the rest of the syrup ingredients in a saucepan, stirring until the sugar dissolves. Simmer for another 20 minutes. Cool, strain and refrigerate. To serve, pour a portion of the syrup in a glass and top with the add-on ingredients to your taste.
