Prep time 30 mins Cooking time 15-20 mins Makes 1.5 litres FOR THE SYRUP 8 large ripe lemons 1.5 litres wa­ter 125g fresh gin­ger, grated 1kg sugar 2 tsp cream of tar­tar ADD-ONS Soda wa­ter, ice, lemon or gin­ger slices and mint leaves To pre­pare the syrup, wash the lemons and grate the zest, and squeeze the juice. Heat the zest and juice with the rest of the syrup in­gre­di­ents in a saucepan, stir­ring un­til the sugar dis­solves. Sim­mer for an­other 20 min­utes. Cool, strain and re­frig­er­ate. To serve, pour a por­tion of the syrup in a glass and top with the add-on in­gre­di­ents to your taste.
