DAIRY-FREE DATE AND AL­MOND CREAM

Serves 4 Prep and cook time, 30 min­utes 250ml al­mond milk 1 pinch salt 300g/2 cups pit­ted dates, soaked in hot wa­ter for 20 min­utes Warm the al­mond milk with the salt in a saucepan set over a medium heat. Once the milk starts to steam, re­move from the heat. Drain the dates and place in a food pro­ces­sor. Pulse un­til finely chopped. Turn the pro­ces­sor to high and slowly pour in enough of the warmed milk to make a thick purée. Serve warm or cover and chill.
