DAIRY-FREE DATE AND ALMOND CREAM
Serves 4 Prep and cook time, 30 minutes 250ml almond milk 1 pinch salt 300g/2 cups pitted dates, soaked in hot water for 20 minutes Warm the almond milk with the salt in a saucepan set over a medium heat. Once the milk starts to steam, remove from the heat. Drain the dates and place in a food processor. Pulse until finely chopped. Turn the processor to high and slowly pour in enough of the warmed milk to make a thick purée. Serve warm or cover and chill.
