SESAME SEED, DATE AND WAL­NUT BITES

Makes about 24 bites Prep and cook time, 25 min­utes; freezing time, 1 hour 280g/2 cups wal­nuts 300g/2 cups pit­ted dates (Med­jool are a good op­tion) 50g/⅓cup sesame seeds 3 tbsp co­conut oil, melted 120g/ 1 ½ cups des­ic­cated co­conut Process the wal­nuts in a food pro­ces­sor un­til crumbly in tex­ture. Add the dates, sesame seeds, and co­conut oil, puls­ing sev­eral times un­til a thick dough forms. Take ta­ble­spoons of the dough and roll be­tween damp palms into balls. Roll in the des­ic­cated co­conut and put on a tray lined with grease­proof pa­per. Freeze un­til firm. Let the bites stand at room tem­per­a­ture for 5-10 min­utes
