PEACH AND ALMOND PORRIDGE
2 cups quick-cooking porridge oats 4 cups milk, plus more if required 1 can peaches in light syrup, drained and chopped into small pieces 2 tbsp butter 2 tbsp honey 1 cup chopped almonds 1 tsp cinnamon powder 4 tbsp brown sugar TO SERVE: 2 fresh peaches, sliced Grated fresh coconut, optional Place all the ingredients in a saucepan and stir over a medium heat until the oats are soft and cooked through. Add more milk if you prefer a thinner texture. Transfer to bowls, and top with sliced peaches and a scattering of grated coconut if desired.
