Prep time 15 mins Makes 1 large jar 2-3 bunches (500-750ml) co­rian­der or rocket leaves 4 gar­lic cloves ½ cup mint ½ cup pars­ley 1 spring onion 1 tsp ground cumin 1 tsp salt Juice and zest of 1 lemon 6 tbsp oil Blitz to­gether co­rian­der or rocket, gar­lic, mint, pars­ley and spring onion un­til it has a coarse tex­ture. Add the re­main­ing in­gre­di­ents and pulse a cou­ple of times un­til well mixed. Pour it out into a clean jar and re­frig­er­ate.
