Prep time 10 mins Microwave time 28 mins Makes 1 large jar 500g apricots or peaches, halved and pitted 4 tbsp lemon juice 1-2 strips lemon rind 2 crushed cardamom pods 2 cups (500ml) sugar Mix together the fruit with lemon juice, lemon rind and cardamom in a microwave-proof bowl. Microwave for 5 minutes. Stir, add sugar and stir again. Microwave for 3 minutes and stir. Continue to microwave for 15-20 minutes, stirring every 3 minutes. To test if ready, let it cool a little. It’s done if it runs off a spoon in flakes. Spoon into a sterilised jar and seal.
