Prep time 10 mins Mi­crowave time 28 mins Makes 1 large jar 500g apri­cots or peaches, halved and pit­ted 4 tbsp lemon juice 1-2 strips lemon rind 2 crushed car­damom pods 2 cups (500ml) sugar Mix to­gether the fruit with lemon juice, lemon rind and car­damom in a mi­crowave-proof bowl. Mi­crowave for 5 min­utes. Stir, add sugar and stir again. Mi­crowave for 3 min­utes and stir. Con­tinue to mi­crowave for 15-20 min­utes, stir­ring every 3 min­utes. To test if ready, let it cool a lit­tle. It’s done if it runs off a spoon in flakes. Spoon into a ster­ilised jar and seal.
