BR­USCHETTA WITH SMOKED SALMON AND MAS­CAR­PONE

Prep time 15 mins Cook­ing time 3 mins Serves 4 200g smoked salmon 2 spring onions, chopped 100g mas­car­pone cheese Lime or lemon juice, to taste 8 pieces of cia­batta bread Lime or lemon wedges, to serve Chives, to gar­nish Cut the salmon into 1cm-wide strips. Mix to­gether with chopped onions, mas­car­pone and lime or lemon juice. Toast the bread on a grid­dle pan or un­der the grill on both sides. Top with some of the salmon mix­ture. Serve with lime or lemon wedges and gar­nish with chives.
