The hum­ble let­tuce isn’t just salad filler. With th­ese dishes, make it the hero of your first 2018 meals

From be­ing an ex­tra to be­com­ing the hero, the hum­ble let­tuce has come a long way.

Prep time 15 mins Serves 4

3 white nec­tarines, cut into wedges 50g mixed curly leaves, such as green elk, frisée and wild rocket

4 tbsp finely chopped chives

FOR THE VINAIGRETTE

100g creamy Greek feta, crum­bled 80ml( ⅓cup) ex­tra-vir­gin olive oil 2½ tbsp lemon juice 2 tbsp wal­nut oil 2 tsp mild honey

For feta vinaigrette, whisk in­gre­di­ents to­gether in a bowl, sea­son well and set aside. Place nectarine wedges on a plate. Com­bine leaves in a bowl, driz­zle with a lit­tle dress­ing, then scat­ter the nec­tarines over. Scat­ter with chives, driz­zle with ex­tra dress­ing, sea­son to taste and serve.
