PREP: COOK:

1) Thread the chicken onto 12 bam­boo skew­ers and cook on a grill pan, turn­ing oc­ca­sion­ally un­til cooked through. 2) Mean­while com­bine co­conut milk, peanut but­ter and chilli flakes with a tea­spoon of soy sauce and 2tsp brown su­gar in a saucepan. 3) Bring to the boil, stir­ring fre­quently un­til the sauce thick­ens. 4) Serve with the cooked chicken skew­ers.
