The first in­ter­na­tional ven­ture from Miche­lin-starred Ger­man chef Tim Raue, Dragonfly might be a ca­sual din­ing con­cept but it clearly as­pires to higher ideals, as ev­i­denced by the pres­ence of an eight-course tast­ing menu ac­com­pa­nied by ‘jine’, the restau­rant’s spe­cially cre­ated juice drink se­lec­tion, bot­tled in the style of wine and paired ac­cord­ingly. Dishes are dis­tinctly high-end, from black truf­fle dim sum with spinach and bone mar­row and tur­bot with spring leeks and ten-year-aged soy to a de­li­cious Shang­hainese beef with pa­paya and tomato. The un­doubted high­light, how­ever, is the sig­na­ture Can­ton-style lan­gous­tine, a frankly huge shell­fish spec­i­men en­cased in a crisp tem­pura bat­ter and bathed in a de­li­ciously mor­eish wasabi dress­ing.
