GREEN BEANS WITH TOMA­TOES AND AN­CHOVIES

45ml olive oil 500g cherry toma­toes, halved 1 bunch of spring onions, finely chopped 2 cloves gar­lic, crushed 350g young green beans, chopped 4-6 an­chovy fil­lets, chopped 30ml fresh mar­jo­ram or pars­ley, chopped 1) Heat the olive oil in a fry­ing pan and sauté the cherry toma­toes over a medium heat un­til they be­gin to caramelise. Add the spring onions and gar­lic and stir-fry for a few min­utes or un­til the spring onion is soft. Add the green beans and stir-fry un­til heated through. 2) Add the an­chovy fil­lets and sea­son with salt and pepper (go lightly with the salt, as an­chovies are al­ready salty). If you pre­fer, you can stir a pinch of brown sugar in. Sprin­kle over the herbs and serve.
