GREEN BEANS WITH TOMATOES AND ANCHOVIES
45ml olive oil 500g cherry tomatoes, halved 1 bunch of spring onions, finely chopped 2 cloves garlic, crushed 350g young green beans, chopped 4-6 anchovy fillets, chopped 30ml fresh marjoram or parsley, chopped 1) Heat the olive oil in a frying pan and sauté the cherry tomatoes over a medium heat until they begin to caramelise. Add the spring onions and garlic and stir-fry for a few minutes or until the spring onion is soft. Add the green beans and stir-fry until heated through. 2) Add the anchovy fillets and season with salt and pepper (go lightly with the salt, as anchovies are already salty). If you prefer, you can stir a pinch of brown sugar in. Sprinkle over the herbs and serve.
