400g lamb shoul­der, cleaned and cubed

2 cloves gar­lic, chopped

20g cumin pow­der

20g co­rian­der pow­der

20g smoked sweet pa­prika

20g thyme

30ml honey

20ml sun­flower oil

1 lemon, zest only, grated

1) Mix all of the in­gre­di­ents ex­cept the lamb to­gether in a large bowl and sea­son to taste. 2) Add the cubed lamb and al­low to mar­i­nate for 30 min­utes to an hour in the fridge. 3) Skewer the lamb onto pre­soaked bam­boo ke­bab sticks and grill on the BBQ un­til cooked as you pre­fer.

THE TIP Re­mem­ber that when bar­be­cu­ing meat, the higher the heat is on the out­side, the rarer the meat will be in the cen­tre.
