ASIAN STEAK AND NOODLES
500g sirloin steak, cut into 2cm cubes 3cm piece fresh ginger, grated 4 cloves fresh garlic, minced 2 red chillies, chopped (deseeded if you don’t want too much spice) 1/4 cup sesame oil 1/2 cup rice vinegar 2 tsp balsamic vinegar 2 tsp soy sauce 1 pack udon noodles 1 bunch fresh coriander Salt and freshly ground black pepper
1) in a large bowl, mix the ginger, garlic, one chopped red chilli, sesame oil, rice vinegar, balsamic vinegar, and soy sauce. divide the mixture into two bowls, then cover and refrigerate one. Add the beef cubes to the other bowl and let it stand for two hours, or overnight if possible. 2) divide the meat into four equal portions, then thread onto four skewers. 3) Heat a griddle pan until smoking hot, place the skewers on the sizzling pan and cook for around three minutes undisturbed. Turn them over and cook for a further three minutes or so, until they are done to your liking. 4) Set the skewers aside to rest as you cook the noodles according to the packet instructions. Tip the cooked noodles into a bowl and toss with the refrigerated dressing. 5) garnish the skewers with fresh coriander and chopped chilli, and serve with the noodles.
