500g sir­loin steak, cut into 2cm cubes 3cm piece fresh gin­ger, grated 4 cloves fresh gar­lic, minced 2 red chill­ies, chopped (de­seeded if you don’t want too much spice) 1/4 cup sesame oil 1/2 cup rice vine­gar 2 tsp bal­samic vine­gar 2 tsp soy sauce 1 pack udon noo­dles 1 bunch fresh co­rian­der Salt and freshly ground black pep­per

1) in a large bowl, mix the gin­ger, gar­lic, one chopped red chilli, sesame oil, rice vine­gar, bal­samic vine­gar, and soy sauce. di­vide the mix­ture into two bowls, then cover and re­frig­er­ate one. Add the beef cubes to the other bowl and let it stand for two hours, or overnight if pos­si­ble. 2) di­vide the meat into four equal por­tions, then thread onto four skew­ers. 3) Heat a grid­dle pan un­til smok­ing hot, place the skew­ers on the siz­zling pan and cook for around three min­utes undis­turbed. Turn them over and cook for a fur­ther three min­utes or so, un­til they are done to your lik­ing. 4) Set the skew­ers aside to rest as you cook the noo­dles ac­cord­ing to the packet in­struc­tions. Tip the cooked noo­dles into a bowl and toss with the re­frig­er­ated dress­ing. 5) gar­nish the skew­ers with fresh co­rian­der and chopped chilli, and serve with the noo­dles.
