Chicken, Courgette and lemon penne
1) Cook the penne according to the packet instructions. Roast the chicken breasts, then slice. 2) Meanwhile, heat the butter in a frying pan. Add the garlic and courgettes and cook over a medium heat for five minutes or until golden. 3) Add the chicken, lemon zest and lemon juice and cook over a low heat, stirring, until the chicken is heated through. 4) Add the drained pasta, season with salt and pepper and toss to combine. Serve immediately with a fresh green salad on the side.
