Chicken, Cour­gette and lemon penne

1) Cook the penne ac­cord­ing to the packet in­struc­tions. Roast the chicken breasts, then slice. 2) Mean­while, heat the but­ter in a fry­ing pan. Add the gar­lic and cour­gettes and cook over a medium heat for five min­utes or un­til golden. 3) Add the chicken, lemon zest and lemon juice and cook over a low heat, stir­ring, un­til the chicken is heated through. 4) Add the drained pasta, sea­son with salt and pep­per and toss to com­bine. Serve im­me­di­ately with a fresh green salad on the side.
