What was your motivation in creating the menu for Zeste?
We wanted to create a menu filled with fresh, fast and healthy food. We have used some Asian and European flavours as inspiration to create dishes that are tasty and nutritional, so expect superfood bowls, Kimchi Benedict and Smashed Avocado.
How important are “organic” and “sustainable” when searching out meat, vegetables and fruits?
our mission is to find the freshest, healthiest and most nutritious products in the market to cater to the palates of our guests. We do this by sourcing the right product from the right suppliers in the region.
Has your restaurant taken any measures to tackle food waste?
We base our orders on the forecasted occupancy levels in the hotel. In addition, we also have Happy Hour at our food counter on a daily basis to minimise the wastage.
And how about plastic?
We maximise our use of eco and biodegradable products as far as possible.
