Executive chef, Emirates Palace
One of the weirdest requests I’ve had was when a couple wanted to split a burger. It’s a reasonable request in general, but then they asked the waiter to have one half of the burger cooked well done and the other cooked medium.
I once dislocated my shoulder when I was rushing to get cooked food to a screaming chef and hit a corner wall. That wasn’t half as painful as my chef ’s reaction. I had to continue until after service before I was able to see a doctor.
I’m going crazy over elderflower. It reminds me on my childhood. We picked elderflower at home and made jams, marmalades and syrup.
I hate cooking with truffle oil. The taste is incomparable and it destroys the flavour of anything it touches. Even one tiny drop of it is enough to ruin a dish for me.
Marmite is the one ingredient I would never use. This stuff is the most salty, bitter, unpleasant ingredient I’ve ever tasted.
I like to treat myself to a Magnum ice cream. I feel unable to control my consumption despite knowing it’s junk food.
A few years back I had a guest in a hotel request to have a bonfire in the lobby of the hotel to grill his sausages.
