One of the weird­est re­quests I’ve had was when a cou­ple wanted to split a burger. It’s a rea­son­able re­quest in gen­eral, but then they asked the waiter to have one half of the burger cooked well done and the other cooked medium.

I once dis­lo­cated my shoul­der when I was rush­ing to get cooked food to a scream­ing chef and hit a cor­ner wall. That wasn’t half as painful as my chef ’s re­ac­tion. I had to con­tinue un­til af­ter ser­vice be­fore I was able to see a doc­tor.

I’m go­ing crazy over el­der­flower. It re­minds me on my child­hood. We picked el­der­flower at home and made jams, mar­malades and syrup.

I hate cook­ing with truf­fle oil. The taste is in­com­pa­ra­ble and it de­stroys the flavour of any­thing it touches. Even one tiny drop of it is enough to ruin a dish for me.

Mar­mite is the one in­gre­di­ent I would never use. This stuff is the most salty, bit­ter, un­pleas­ant in­gre­di­ent I’ve ever tasted.

I like to treat my­self to a Mag­num ice cream. I feel un­able to con­trol my consumption de­spite knowing it’s junk food.

A few years back I had a guest in a ho­tel re­quest to have a bon­fire in the lobby of the ho­tel to grill his sausages.
