Executive chef Al Ruiz on what his Orlando-based food truck will be serving in Abu Dhabi

How would you describe the food you serve? The concept is about serving innovative sushi along with Korean-inspired street fare. Why did you decide to open a food truck? I know most people think you shouldn’t eat fish off of a truck, but I’ve been a sushi chef for around 12 years and had never seen a sushi food truck. We were the first truck of our kind in Orlando, Florida, and it’s been a crazy journey. What is the one dish at your truck you can’t miss? For me personally it’s the stuffed avocado. It’s one of my favourite dishes and it always does really well. It’s fairly simple but delicious and I haven’t seen it on anyone else’s menu. Have you ever been to Abu Dhabi before? No, I’ve never been outside of the country! I’ve done some research and am very excited. I’ve been told I should go ride a camel while I’m here.
