I enjoy experiment­ing with many items but ginger oil is one ingredient that does not seem to fit any Arabic dish. I keep trying though. My favourite flavour is olive oil. The health benefits of olive oil are unrivalled. In fact, we are only just beginning to understand the countless ways it can improve our health and our lives. I hate to cook with ghee, or clarified butter. I prefer using healthy oils such as olive oil to enrich my dishes.

Kebab with spinach sauce was one of the strangest things I made for a guest. But it turned out to be really delicious.

I prefer cooking my own food, but when I do go out Blue Grill in Yas Island Rotana is my favourite. It is good for chefs to go around and taste other cuisines.

In terms of my career, my biggest dream is to write and publish a book of recipes.
