Rosie cre­ates Pepsi Pi­geon, with a lit­tle help from some friends

This recipe might seem a bit com­pli­cated, but it’s only the spice mix that con­tains a few more in­gre­di­ents than usual, and it’s so worth the ex­tra time to gather the com­po­nents to­gether.

I’ve been hav­ing trou­ble sourc­ing ed­i­ble ver­min lately – the lovely Mick Gar­vey, my pet pest con­troller, is will­ing, but he lives too far away for me to ask him to de­liver, and not feel guilty. How­ever, I’ve been lucky enough to find a cou­ple of lads who shoot lo­cally, and they sup­plied me with the pi­geons for this dish, so heart­felt thanks to Colin Free­man, Ben Wise­man and Mal­colm Clarke. You’re all lovely boys! I could do with a rab­bit, too, by the way, if you’re pass­ing!

This month, I’ve had help from more than one quar­ter. The in­spi­ra­tion for this su­perb supper came from my next-door neigh­bour who makes a habit of cooking with her kitchen win­dows open. I in­haled the fumes from a piece of gam­mon she was brais­ing and she gave me some to taste. I was very im­pressed. Who’d have thought that a hum­ble tin of Pepsi – other cola brands are avail­able ¬ could make a cou­ple of pi­geon breasts so tasty, sticky and suc­cu­lent! Try it – I bet you’ll be as sur­prised as I was.

You can serve the meat mix­ture with

IN­GRE­DI­ENTS

Two pi­geon breasts A cou­ple of pork belly slices, cubed (op­tional) Two rash­ers of streaky ba­con One chopped red onion Hand­ful of mush­rooms Half each of a green and yel­low/or­ange pep­per Sea­son­ing: A ta­ble­spoon of gar­lic paste One dessert­spoon of gin­ger paste – or use fresh what­ever you like, but it’s quite rich so I set­tled for plain boiled rice. You could use plain noo­dles – even mashed pota­toes if you pre­fer. The belly pork is op­tional – I added it be­cause I like a bit of fat to add flavour, but you can leave it out and add an­other cou­ple of pi­geon breasts for bulk. I gar­lic and gin­ger Half a tsp of five-spice pow­der, or two star anise Pinch of salt 2 tbs tomato puree 1 tbs Worces­ter­shire sauce 2 tbs dark soy sauce I tbs vine­gar One beef stock cube, or pot. I can diet cola

Serve with some­thing bland.
