Baked mushrooms & blue cheese
Serves 2 Prep time: 5 mins Cook time: 10 mins
Ingredients
4 large field mushrooms (approx 80g each) 40g wholemeal breadcrumbs 100g blue cheese Few sprays of cooking oil (eg Fry Light olive oil or sunflower oil) 60g rocket leaves to garnish
Directions
1 Preheat the oven to 200˚C/ 180˚C fan. 2 Carefully remove the stalks from the mushrooms. 3 Place as equal amount of blue cheese in each mushroom. 4 Sprinkle breadcrumbs on top of each mushroom. 5 Place on a non-stick baking tray and add a couple of sprays of cooking oil. Place in the oven for 10 mins. 6 Serve immediately, garnished with some rocket leaves. Additional information: The recipe contains gluten. Wholemeal bread is a good source of fibre.
