Break­fast Fruity toast

Toast 2 slices of fruit loaf and spread thinly with low-fat spread. Serve with a hand­ful of blue­ber­ries and rasp­ber­ries.

Lunch Av­o­cado pitta

Care­fully slit the top of a whole­meal pitta and spread a blob of low-fat hum­mus in­side. Stuff it with ½ sliced av­o­cado, shred­ded let­tuce, sliced cu­cum­ber, grated car­rot and cherry tomato halves. Serve with a side salad. Fol­low with 1 ap­ple.

Din­ner Beef roast

Place 3 par­boiled pota­toes in an oven dish and spray gen­er­ously with low-calo­rie spray oil. Roast in the oven on high un­til soft, spray­ing and turn­ing in­ter­mit­tently. Then add 1 frozen York­shire pud­ding and 2 slices of deli roast beef to a small roast­ing tin. Cover the beef with a lit­tle gravy and cook in the oven un­til thor­oughly heated. Serve with steamed cab­bage and a driz­zle of the left­over gravy.
