Breakfast Fruity toast
Toast 2 slices of fruit loaf and spread thinly with low-fat spread. Serve with a handful of blueberries and raspberries.
Lunch Avocado pitta
Carefully slit the top of a wholemeal pitta and spread a blob of low-fat hummus inside. Stuff it with ½ sliced avocado, shredded lettuce, sliced cucumber, grated carrot and cherry tomato halves. Serve with a side salad. Follow with 1 apple.
Dinner Beef roast
Place 3 parboiled potatoes in an oven dish and spray generously with low-calorie spray oil. Roast in the oven on high until soft, spraying and turning intermittently. Then add 1 frozen Yorkshire pudding and 2 slices of deli roast beef to a small roasting tin. Cover the beef with a little gravy and cook in the oven until thoroughly heated. Serve with steamed cabbage and a drizzle of the leftover gravy.
