FUNGUS

BLACKENING WAXCAP In autumn, rough, unimproved grassland – free from chemicals, frequently grazed – is fabulous for fungi, particularly waxcaps. These showy mushrooms encompass a fair colour spectrum, with species that are scarlet, ochre, orange, pink, violet or green. My personal favourite is the Blackening Waxcap, which starts with blazing tones but becomes steadily more ‘chargrilled’ in appearance, eventually turning as black as barbecue charcoal.
