ERE is a recipe for a tasty starter which can also be served as a main course. It is Hot Smoked Duck, Chicory and Orange Salad

In­gre­di­ents:

1 Smoke duck breast 1 Whole chicory 1 Orange 1 Red onion Mixed lead Pea shoots to gar­nish

Method:

Slice and warm through the duck breast. Mean­while, cut the root from the chicory and re­move the leaves, plac­ing three into a tri­an­gu­lar pat­tern in the cen­tre of the plate.

Slice the re­main­ing chicory leaves to go into the salad.

Peel and seg­ment the orange and add that to the salad us­ing some of the juice as a dress­ing
