ERE is a recipe for a tasty starter which can also be served as a main course. It is Hot Smoked Duck, Chicory and Orange Salad
1 Smoke duck breast 1 Whole chicory 1 Orange 1 Red onion Mixed lead Pea shoots to garnish
Slice and warm through the duck breast. Meanwhile, cut the root from the chicory and remove the leaves, placing three into a triangular pattern in the centre of the plate.
Slice the remaining chicory leaves to go into the salad.
Peel and segment the orange and add that to the salad using some of the juice as a dressing
