it was named after the bar’s favourite blonde wait­ress. The key to this drink is the Scotch whisky used which greatly af­fects the bal­ance of the drink. It should be flavour­some with a sub­tle peat back­drop.

Add one and three-quar­ter shots Scotch whisky, one and a quar­ter shots sau­vi­gnon blanc, one shot pressed ap­ple juice, a third of a shot gomme syrup and a quar­ter shot freshly squeezed le­mon juice.

Shake and strain into a mar­tini glass. Gar­nish with an ap­ple slice.
